The Palouse is a French wine which come from only one type of vine of Syrah coming from vine selected by us, for their soil and typicality.
Visual Aspect; Wine clear and bright, an intense colour darken with purplish-blue sparkle. Nose intense and complex, the first nose show typical aromas of this type of vine, notes of black fruits and spices.
Tasting aspect: tannins are here without being aggressive or dry. The whole is round and balanced. The fruit aromas prevail. The wine is complete and distinguished.
To expand our gamme, we produce in partnership, this Côte du Rhône cuvée 100% Marsanne, we named it « Emotion ». A rigorous selection which allow us to get a wine with a fresh taste in mouth, leaving appear aromas of white pulp fruit (peach or pear). Of a beautiful bright colour, we can taste it during the year or let it age during 3 years. “Emotion » will be taste during the aperitif, with a first course, fish or white flesh meat.
100 % Marsanne with selected vine due to their qualities and orientation.

A smooth tannic deposit can appear during the aging, but it doesn’t modify the wine. Vine de Garde, reach its apogee at its 10years.
The first plantations of the house A.Paret in Seyssuel was made in 2000 when he connect with his friends to bring back this antic wine. His Seyssuel red wine, Serinae, melt Syrah and Viognier in the same plot, as it can be made on the other side of the Rhône.
Replant in 2000, the story of this vineyard go back the roman epopee, where the city of Seyssuel was already well-known for its quality wines.
This vineyard is located on the north of the city of Vienne, where the Rhône valley is the narrowest. This exceptional configuration deduces a specific climate, Mediterranean type. That’s how we meet it, on the côteaux of Seyssuel, cicadas and cactus, which are usually absent in valley and only appears 200km by the south. In this area, we can also meet the « gagée du rocher », which is a protected flower and underline the unique charm of this area.
These steep side lead to a temperature increase and have consequences on the winds. The dominate winds are stronger than anywhere, they dry up the climate and increase its specificity.
The plots cultivated on this Domaine, even though they are located on the left side of the river, are ideally oriented south and facing this precise place where the river shape an elbow. Those exposure conditions can be compared to the famous designations located on the right side.
These sloping plots have high density plantation, it cause a harsh competition between the vines, as the consequences, a low production rate by vine plant; it allows the wine to express this exceptional soil. The fertilizer input is only organic and allow to improve the nutritive and structural qualities of the soil.

Vineyard of the Lys de Volan, overlook the Rhône faced to the Midi cloaked form the Mistral. Its granitic terraces fit closely the shape of the rocky cove overhanging the castle, and it is in this piece of heaven that the Lys de Volan is lulled by the wrapping warmth of the summer, marvellously cloaked by this natural stoned basket. These characteristics produce a subtil and rare wine. Thanks to archives of old Perouges, we have been able to find the first owner of the Volan’s vineyard : It was Mister Pierre Goran de Malleval who bought it on February the 6th of 1486 : « Monsieur Pierre Goran de Malleval s’est porté acquéreur le 6 février 1486 d’un tènement de maison, grange, basse-cour, et contenant 3O fessoirées de vigne au territoire de Vantafol ou de Volan (1 fessoirée = 35Om2) » (extract of the property title in french).
Pale colour, shiny, goldenrod, over time, perfumed with peach and apricot, fully reveal itself if we let the wine bloom a little in our glass. A rich and greasy texture, smooth, he is balanced and round, without acidity. Go well with game fish, Asian food, asparagus, foie gras, goat cheese or simply as an aperitif.

Under temperature control, matured in new oak barrel, raised on thin deposits with stirring during 10 months, malolactic fermentation in barrel. Transfer according to the lunar calendar.
Ideally under lab control, synchronize with the lunar calendar.
Drink it before 2 years to discover its fruits aromas. As soon as the third year appears, the fruit withdraw to the advantage of a side clever floral aroma. With the fourth year another wine is revealed, due to the maceration and to the soil of Volan which give birth original and unique aromas. Serving temperature between 12 and 13 °C.
The vineyard of the "Ceps du Nébadon" expand on several côteaux fo our lands with a southern expositon. This white wine with an audacious bouquet and a special taste is like a diamond with thousands faces.
With a golden pale robe and golden rereflection, a nose, a powerfull bouquet of wildflower (violet, iris), and, apricot. In mouth, soft but heady, onctuous, overall coolness, nice length in mouth, spicy.
Go well with cooked fishes, foie gras, asian food, goat cheese.

This wine has a marvellous taste and can be drunk after the maturation and during 2 years after it, beyond this time, its golden robe and reflects let admirables third aromas appeared.

The oldest and most prestigious vineyard of the Rhône valley is behind this cuvée, raised in our wine cellar by Anthony Paret in tribute to his father.
The implantation of vine on the abrupt soil located on the brown hill and the blond hill, does not allow mechanisation and carry on working by the old-fashioned way, on man’s back.
After 2 years of growth in new barrels only, the « serine » (old Syrah) exhale its floral aromas and its soft fruits aromas, which mature bit by bit with the aging of the wine. The colour of the wine is a beautiful ruby red.
In tasting, depending of the maturation, open it between one or three hours before the degustation and pour it with temperature located between 16 and 18°C (decant the 5th first years). This wine go well with game, red meat, dishes cooked in sauce.

Our vineyard is located on the côteau of Rochecourbe, municipality of Malleval. This côteau is well known for its outstanding soil and it perfect location. A tough soil where the roots must go deep to find water and nutriments, perfectly drained where water is rare, a poor soil which require the vine to suffer in purpose to extract a maximum of prestigious aromas. The Larme du Père, it’s a soil which saturate red wine with noble tannin. A subtle perfume of blackcurrant and raspberry melted with leather and liquorice when the wine ages. Go perfectly with tender meat, small game, civet or Japanese food.
Between 2 and 5 years (beyond the harvesting year) we can drink this vintage well decanted knowing that we will encounter an intense fruit taste, an affirmed smooth taste but an assured tannin taste, after 5 years, this wine seem to be quietened in the tannin: the taste became soft and round. Serving temperature: 16 to 18 °C.

Les Pieds Dendés are produced on several côteaux of our vineyard, on soft soils and on high côteaux. This selection of soils offer a tender and soft wine, exhale perfumes like blackcurrant and savage raspberry. It owes his name to the method the ancients used to plant the vine, by 3 or 4 vine stock in pyramidal shape, « pieds dendés » in local patoi. Has to be drunk in the fifth first years between a temperature of 16 to 18°C.
With great delicacy, harmonious and balanced shape without too much breadth, purple, a cluster of soft fruits and spices. A taste round and tannic allow it to go with fowl and meat in sauce.

This cuvée is established on the base of several côteaux, benefiting from a climate peculiar from the Côtes du Rhône. This wine has been rigorously selected, its allow us to get a shimmering wine rich and full of aromas. Of a nice sustained colour, we can drink it young or let it mature.
With a perfume of soft fruits, raspberry, redcurrant, spices and blackcurrant it goes well with grilled meats, white meat, cold meats, affined cheeses. Served it with a temperature between 16 and 18°C.

Our vine-yard is located on the côteau of Rochecourbe, community of Malleval. This côteau is well-known for his exceptional soil and its perfect localisation. This cuvée, produce in the Hérault department on the hard soils of only one type of vine (the Syrah), is known to be sunny and powerful as the climate where it is born. Of a deep purple, it has a fruity nose with the perfume of Orientals spices and grilled bread. Go with gibbet, roasted meat, « cassoulet », cold meats or Asian food. It can be kept 4 years and taste in a temperature between 16 and 18°C.

This Viognier, come from our Domaine of Cournonsec, department of Hérault, produce a white wine with fruits aromas, enhanced by a smooth texture. It explodes in nose as in mouth on fruity notes of peach, citrus fruits, exotic fruits and almond. The extreme complexity of this cuvee enhances of the multiple fragrances of Mediterranean trees which surround this vineyard.
This wine suit well in tasting before a meal, or to go with a shellfish meal, fish, goat cheese or asian food. It can be keep during 3 years. Tasting temperature : 10 to 12 °C.
We also produce the Pastourelle cuvée, wine with 30g of residual sugar.

The grapes of this cuvée has been selected on Syrah’s plant of our very typical soil of Rochecourbe. This wine is farmed exclusively in new oak barrels. The secret of this wine come from woods from multiple French forest. This is a cuvee which produce long maturation bottle. We can taste marvellous aromas, a dense nectar, really padded, an exceptional wine concentrate and generous, of a sustained colour, dark red, a bouquet of raspberry, spices and a soupcon of violet. Extended in mouth, tannic, but smooth.
At the table, following the age, open it 1 or 3 hours before tasting, serve it between 16 and 18 °C, we can decant it during its 5 firsts years and serve it with fine meat, water gibbet, perfumed meal, beef or Japanese food. This wine evolves slowly, it reaches is matured point at 12 years.

This cuvee has been created on the demand of our Japanese importer, Sanko Hasumi Shoten, who selected a well delimited area on the 420 nuits cuvee soil. These grapes have been brought back to the wine-cellar and processed in new barrels which are made with oak from the Tronçais forest and deliver with one bottom only. All the vinification operations have been realized hand made. The fermentation over, the cooper came to put the second bottom, maturation of the wine has been made in the same barrels.
All the work made on this wine is synchronized with the lunar calendar.
